lemony pistachio white chocolate chip cookies
a simple, twerk on my brother’s chocolate chip cookie recipe.
½ cup (1 stick) salted butter, browned & slightly cooled
¾ cup packed light brown sugar
½ cup white sugar
1 large egg, room temperature
1 tsp vanilla extract
1 1/2 cups all-purpose flour
½ tsp baking soda
1 4oz bar white chocolate, roughly chopped
1/4 cup of pistachios, shelled & chopped
the zest of 1 lemon, finely chopped
preheat oven to 350º
combine sugars & butter until combined. add egg & vanilla. until smooth
gradually incorporate flour & baking soda.
fold in most of the chocolate, pistachios, reserving a quarter of each for topping.
use parchment paper & a small dough scoop. one scoop per cookie straight onto the parchment paper.
place a chunk of chocolate and a few pistachios on the top of cookies, for the beauty and the bite.
bake @ 350 degrees for 10 mins, or until the outer edge is just set
finish with flaky or kosher salt immediately upon removal.
let cool for 10 mins before devouring.
